Kale and Quinoa Lettuce Cups with Spicy Peanut Dressing

Ingredients

Spicy Peanut Dressing:
1/3 cup (75 mL) natural smooth peanut butter
2 tbsp (30 mL) lime juice
2 tbsp (30 mL) honey
1 1/2 tsp (7 mL) soy sauce
1 1/2 tsp (7 mL) minced fresh ginger
1 tsp (5 mL) Asian-style chili paste
1 clove garlic, minced 

Lettuce Cups:
12 Yves Veggie Cuisine® Kale and Quinoa Bites
12 Boston lettuce leaves
1 cup (250 mL) shredded cabbage
1 cup (250 mL) bean sprouts
1 cup (250 mL) shredded carrots
1/3 cup (75 mL) chopped toasted peanuts
3 tbsp (45 mL) chopped fresh cilantro
1 red chili pepper, sliced

Kale and Quinoa Bites

Directions

  1. Spicy Peanut Dressing: Whisk peanut butter with 3 tbsp (45 mL) hot water. Whisk in lime juice, honey, soy sauce, ginger, chili paste and garlic until smooth.
  2. Lettuce Cups: Heat Kale and Quinoa Bites according to package directions; divide among lettuce leaves. Top each with cabbage, bean sprouts and carrots. Drizzle with peanut dressing; garnish with peanuts, cilantro and chili pepper.

Tips

Top with cucumber, red pepper and mango if desired.
